Happy Pancake Day - American Style

I’m used to Swedish (or English) pancakes, the large and thin kind, so I thought I’d try a new type for Pancake Day and American style it is - served with blueberries and acacia honey. It’s the first time I’ve ever made pancakes with almond meal and it worked out okay. You can’t achieve quite the same soft and velvety texture but they taste a lot more than flour based ones which is nice and they’re both gluten and dairy free.
