Quinoa Salad with Strawberries and Feta Cheese

For the salad
- 100g black quinoa (or standard white)
- 1 corn on the cob
- 10 strawberries
- 100g feta cheese
- 1/4 cucmber
- Handful of spinach
For the dressing
- 1/4 red onion
- 1,5 tsb lemon juice
- 1,5 tsp white wine vinegar
- 1 tbsp extra virgin olive oil
- Small handful of parsley
- Pinch of sea salt
Start by chopping the red onion finely and leave to wilt in the rest of the dressing ingredients whilst you prepare the salad.
Thereafter cook the quinoa according the instructions on the packet. Also cook the corn the corn on the cob by dropping it into boiling water and simmer for about 7 minutes.
In the meantime chop the cucumber into cubes and halve or quarter the strawberries depending on size.
Once the corn is cooked as has been left to cool for a few minutes, cut the kernels off the cob with a sharp knife.
Assemble the salad in a large bowl and crumble the feta cheese on top. Finish off with the dressing.
